To paraphrase the great, “Yellowbeard the Pirate”, “They’ll have to kill us before we die!” A lot’s happened in the last week or so. We’ve been frozen, de-powered, snowed on, folded, spindled, thankfully not mutilated and finally, thawed out again. For those of you, who don’t know, Texas had a huge winter storm that caused power outages, no water and unfortunately, many ended up with frozen pipes.
The cannery, as well as mine and Wild Will’s homes have all made it through pretty much intact. Mom’s house– not so much. Rest assured, dear reader, that we’re on top of it and will have Mom’s home in tip-top shape fast, pronto, and on the double. Terrific Tuggy would have it no other way.
Please bare with us if we have a few delays. It’s a little bit of a mess around here and will take a bit to sort it out. We had to shut down for a few days and things do tend to pile up quickly when that happens. But much like Mom’s house we’re on top of it and will have everything back in line fast, pronto, and on the double. None of us will have it any other way. Hey, we’re Texans. We’re use to our state trying to kill us. Snow and ice are just a refreshing change of pace from the usual “hotter than the surface of the sun” summers and mosquitos that try to carry us off.
I have a confession to make. I like crackers. It almost doesn’t even matter what kind– Saltines, Ritz, or even Cheese Nips. I basically survived a semester of college by eating peanut butter and cheese crackers.
I’ve even invented a regular dinner night just so I could sneak them in and we call it “Hippy Night.” It’s a sacred evening gathered around the television to honor our friends, “The Appetizers.” Such a perfect excuse, so I can feed my crunchy cracker addiction. I admit it, I feel no shame. I’ve never met a cracker I didn’t like. Perhaps, Wheat Thins was not my favorite when I was younger, but even they’re not safe anymore.
So with very little adieu, I present our “Mighty Spicy Pimento Cheese.” Skip the bread, grab a pack of your favorite crackers, and give a nod to our crispy thin little friends as you chow down. If you do want to make a mouth watering sandwich, then grill it up.
WHAT YOU NEED
3 cups – Fiesta Blend Cheese or Cheddar Cheddar.
We just use the Fiesta Blend.
1 cup – Mayonnaise (Hellman’s or Duke’s. Why oh why would you use anything else?)
1 – 4oz Bottle of Diced Pimentos
3 Heavy Tablespoons – CowPoke Jalapeno Relish®
